A Healthy Breakfast Crumble so yummy you’ll eat it for Desert too…

I love traditional apple crumble, it’s delicious and super easy to make. I’ve made it a fed times using butter, sugar and flour and it’s divine – but not super healthy and laden with a ton of calories and sugar.

Last Sunday, my mum made an apple crumble using part oats and part flour, reduced the sugar to make it a bit lighter and healthier and it was so good. The oats gave it an extra crunch that we all really enjoyed.

So, I thought why not make it really healthy and swap out the sugar and butter with ingredients that are really nutritious and serve it for breakfast? The result was so so so so good. I decided to make it this morning because I had a few apples and pears that have been sitting in the fruit basket for a while, so what better to attempt than a healthy apple and pear crumble? It’s also gray and raining Saturday morning, which makes a warm breakfast even more appealing and really comforting.

This was my breakfast this morning – warm healthy apple and pear crumble topped with some Greek yogurt – YUM!

Here’s how I made it…

Ingredients:

For the base

4 apple

2 small pears

1 tablespoon dried cranberries

1 tablespoon sultanas

6 dried apricots

a sprinkling of cacao nibs

First things first, start by preheating your oven to 180 degrees Celsius.

Grease a baking dish with some coconut oil to avoid any fruit sticking to the dish. Wash, dry and chop up apples and pears into thin slices and place in your baking dish. Chop up apricots and disperse evenly on top of the apples and pears together with dried cranberries, sultanas and cacao nibs. You can replace any of the dried fruit with any other fruit you prefer – dates, dried figs or prunes would work really nicely too – or omit completely; but I would recommend adding some dried fruit because once baked, they add a lot of sweetness which is needed here because this recipe doesn’t contain any other form of sweetener.

For the topping

1/2 cup cashews

1/2 cup brazil nuts

1 cup oats

3 tablespoons coconut oil

Chop up nuts and add to a bowl with oats and coconut oil and mix using your hands. Transfer topping evenly over apple base and place in the oven to bake for 40 minutes.

The result was so yummy. I had mine with a dollop of Greek yogurt and it was divine. I’ve also been munching spoonfuls of the stuff ever since I finished breakfast too so you know it’s really good haha!
