Delicious Chia Jam – two ways!

There she is – delicious healthy homemade jam. Just three ingredients and around 30 minutes of your time is all it takes for you to enjoy this tasty treat that is LOADED with antioxidants, vitamins and minerals.

I’ve been making chia jam for a while now and I’ve found two simple ways to make it. The method I use varies according to what berries I have on hand – fresh or frozen.

Recipe 1 – using fresh fruit

4 cups chopped strawberries or any other fruit (approx. 400g)
2 tablespoons agave nectar (honey or maple syrup will work just as well)
2 tablespoons chia seeds 

Wash, dry and chop up fruit into small chunks and add to a pot, cook together with agave (or whatever you are using) for about 10 mins on low to medium heat on your stove top. Then, stir in chia seeds and cook for another 10 mins. Take off heat and allow to cool. Chia seeds will continue to absorb the excess liquid to give it a thicker consistency. The more chia seeds you add, the thicker the consistency. Once cooled completely, all the excess liquid should be absorbed. If not, you can add more chia seeds, one teaspoon at a time to achieve a thicker consistency. Adding one teaspoon at a time and allowing the seeds a few minutes to absorb liquid will ensure that you don’t add too many seeds to the jam.

I love adding the jam over Greek yogurt and fruit with some nut butter or over warm porridge.

Recipe 2 – using frozen berries

2 cups frozen mixed berries (approx. 150g) 1 tablespoon maple syrup (or any other sweetener) 2 tablespoons chia seeds

Add berries to a heat-safe bowl and defrost in the microwave for a minute or two – this will help release the juices. Once defrosted, mash the berries using a fork. Mix in the chia seeds and sweetener and combine well. Allow this to sit at room temperature for thirty minutes.

Then just reserve the jam in a sealed jar in the fridge for up to a week or so – I’m not sure weather this lasts any longer because, to be totally honest, we always manage to eat it before the week is up 🙂
